Cherry Margarita

Happy Fourth of July! Yesterday, I wanted to do something a little different. Cherries are in season and I thought the pairing of cherry and lime would be unexpected and delicious. See the recipe below:

2 OZ LIME JUICE (1 OZ PER GLASS)

1 cup of  pitted cherries

tequila  (1 OZ PER GLASS)

SIMPLE SYRUP

club soda

ICE

  1. To make simple syrup : Boil one cup of sugar with one cup of water, until dissolved.
  2.  In a shaker, add 1/4 cup of cherries, ice, 1 oz lime juice, 1 oz tequila, and simple syrup to taste. Shake, shake, shake. (Hint: I like to really shake this harder than you think to release cherry juices and to make the drink more pink.) Pour into a glass, top with splash of club soda. Garnish with a lime slice and a cherry. Option: Add a salt rim.
