Roasted Fig and Honey Porridge

I picked up the most beautiful figs at the farmer's market this week and was inspired to use them in a different way. A delicious way to incorporate figs into a breakfast or even a dessert, is by roasting them, to get them extra juicy and delicious.

RECIPE

  • 2-4 figs
  • 1 cup water (or almond milk)
  • 1/2 cup Scottish Oatmeal (or whatever you like)
  • pinch of salt
  • 2 tbsp honey or maple syrup or brown sugar
  • dash of cinnamon (if desired)
  • handful of pecans

Preheat oven to 350°F. Slice figs in half and place in baking dish. Bake for 15 minutes or until syrupy. 

Meanwhile in a small saucepan, heat 1 cup water and bring to a simmering boil. Add the 1/2 cup of oatmeal and a pinch of salt and let cook for around 10 minutes, stirring until liquid is absorbed. 

Pour into bowls and add figs, honey, cinnamon and nuts. Enjoy!
