RECIPE | Citrus Olive Oil Cake
These winter months are where California really shines. The air is cool, the sun is warm, and around every corner is a citrus tree bursting with fruit. It has become a tradition in January that I will buy a new tree to add to my little growing collection which includes Meyer lemon, kumquat, tangerines, and this year a Cara Cara Orange tree.
Many different varieties of citrus start appearing at the farmer’s markets and it is always interesting to discover something new or some old favorites. With this abundance of the fruit comes much recipe inspiration and I thought I would share my recipe for Citrus Olive Oil Cake with Whipped Mascarpone Cream. The cake takes minutes to make, it is moist and delicious with subtle hints of olive oil and citrus.
I topped this cake with some candied citrus slices, but fresh slices or a nice grating of zest look just as pretty!
