Baked Peaches with Amaretti Crumble

While peaches are in season, I make any excuse to use them on everything : morning oatmeal, salads with mint and goat cheese, or simply grilled as a side dish. I decided to make this dessert and was pleasantly surprised by the mere minutes it took to make. No peeling, just simply halving the peaches and adding some topping and baking in the oven. They are golden, bubbly, and delicious. A great, low maintenance dessert for a summer dinner party.

RECIPE

  • 5 amaretti cookies 

  • 3 tablespoons whole natural almonds

  • 2 tablespoons unbleached all purpose flour

  • 1 tablespoons sugar

  • 1 tablespoon brown sugar

  • 3 tablespoons chilled unsalted butter, cut into 1/2-inch cubes

  • 3 firm but ripe large peaches

  • Vanilla ice cream

DIRECTIONS

1. Preheat the oven t 350° F. Butter 11 x 7 x 2 glass baking dish .

2. Combine cookies, flour, sugar, almonds and butter into a food processor until it becomes a course crumbly texture. 

3. Places peaches, cut side up, in the buttered dish. Sprinkle topping over the peaches. 

4. Bake for 35-40 minutes until the peaches are soft when pierced with a knife. Cool for a few minutes. Serve with Vanilla icecream and a final crumble of an amaretti cookie.
